Recipes from the royal kitchens of Jaisalmer, served on the sands where caravans once camped.
Rajasthani food was born of the desert - recipes that travelled with camel caravans, cooked over coals in iron kadhais, spiced to preserve and to warm. Our chefs come from the same villages that fed the courts of Maharawal Jaisaldev, and their dinner on the sand dunes in Jaisalmer is the most photographed meal in our camp.
The menu celebrates the classics: dal baati churma with ghee-soaked baatis straight from the coal pit, fiery laal maas slow-cooked with Mathania chillies, ker sangri - the desert berry-bean pickle-curry that grows wild in the Thar, bajre ki roti slapped by hand, and gatte ki sabzi in yogurt gravy. End with churma laddoo and saffron kheer.
Not a spice adventurer? The kitchen also excels at tandoor platters, North Indian gravies, Chinese, continental and a children's menu - plus Jain, vegan and low-oil preparations on request. Every dish can be served in the dining hall, on the pool deck, or at a private dune table under lantern light.

A taste of our guests' most-ordered dishes - the kitchen changes specials with the season.
Dal baati churma, gatte, ker sangri, kadhi, bajra roti, rice, salad & dessert - the full Jaisalmer experience on one platter.
The legendary fiery mutton curry of Rajputana hunts, mellowed with cream - order a day ahead for the authentic slow-cook.
Paneer tikka, malai kebab, tandoori chicken and rotis blistered in the clay oven beside your table.
Churma laddoo, moong dal halwa and kesar jalebi - fried fresh at the live counter every festival evening.
Ask our guests what they remember most and the answer rarely changes - the food. There are honest reasons for it. Desert cooking leans on long-shelf-life grains (bajra, ker, sangri) and slow coal techniques that build deep flavour without hurry. Our water carries the minerals of the region, our ghee comes from Bikaner dairies, and the cool dry air turns evening appetites royal-sized.
Every night around the bonfire, our kitchen hosts a small live counter - watch bajra rotis being patted by hand, baatis buried in coal, and chai brewed in brass over open flame. Children love rolling their first (lopsided) baati; our chefs award the bravest with a certificate. Small rituals like these are why families return every winter to our desert camp in Jaisalmer.
